Step-by-Step Guide to Making Cocoa Cupcakes
Weigh the cake flour and cocoa powder
Crack 4 eggs into the mixing bowl of a stand mixer
Add corn oil to the milk
Mix well and set aside
Add 1/3 of the sugar to the egg mixture
Start the mixer and beat on medium speed
After 1 minute, switch to high speed and gradually add the remaining sugar in 2 batches
Stop when the egg mixture has ribbons and doesn’t immediately disappear when the mixer head is lifted
Sift in the cake flour and cocoa powder in batches
Stir well after each addition
Take a small amount of the mixed batter and fold it into the milk-oil mixture, then stir well
Pour it back into the cocoa batter
Stir well
Transfer the cocoa batter into a piping bag and squeeze into cupcake liners
I also added some chopped rainbow sugar
Bake in a preheated oven at 175 degrees for 20 minutes
Remove from the oven when the time is up
I decorated with ice cream-shaped marshmallows, chocolate sauce, and sugar beads
