Steps to Make Coconut and Red Bean Eight-Treasure Rice
Prepare the ingredients: 600g glutinous rice, 600ml water, 200ml coconut milk, 50g coconut oil, 200g low-sugar red bean paste, appropriate amount of walnuts, raisins, dried cranberries, and red dates.
Pour 600g glutinous rice into an electric pressure cooker and rinse it clean.
Add 600ml water to the cooker.
Add 200ml coconut milk to the cooker.
Select the “Cook Rice” function on the cooker.
After about 25 minutes, the glutinous rice is cooked.
Pour 50g coconut oil into a mixing bowl.
Pour the just-cooked glutinous rice into the mixing bowl and mix well while it’s still hot. Let it cool down for later use.
Place a piece of plastic wrap in a bowl, and lay walnuts, red dates, raisins, and dried cranberries on top of it.
Add some glutinous rice on top and press it down gently to fix the nuts and fruits in the rice.
Add 50g low-sugar red bean paste on top of the rice and spread it evenly. Cover it with more glutinous rice, and wrap it up with the plastic wrap to shape it into a ball.
Put the ball in the freezer. When ready to eat, steam it for about 10 minutes. This sweet and sticky Eight-Treasure Rice is a must-have for the Chinese New Year dinner table.
