Detailed Steps for Making Coconut Bread (Bread Machine Version)
Let’s start with the method for making the coconut filling (this step can also be done while the dough is fermenting): Soften the butter in the auxiliary ingredients and beat until smooth and creamy.
Add granulated sugar and beat until light and fluffy.
Add whole egg liquid in 2-3 portions, beating until well mixed before adding the next portion.
Add shredded coconut and mix well.
Put all the dough ingredients except for butter and dried cranberries into the bread machine and start kneading for 10 minutes.
After 10 minutes of kneading, add butter and knead for another 15 minutes.
When there are 4 minutes left for kneading, add dried cranberries (cut into small pieces beforehand).
After kneading is finished, round up the dough, put it into the bread machine, and let it ferment for the first time for about 30 minutes.
When the dough has doubled in size and the indentation made by pressing a finger into it springs back slowly, take out the dough, release the gas, round it up again, cover it with plastic wrap, and let it rest for 10 minutes.
Roll the dough into a rectangular shape of about 20*30 cm.
Spread half of the coconut filling on the middle 1/3 of the dough.
Fold the top 1/3 of the dough down to cover the coconut filling in the middle.
