Detailed Steps for Making Coconut Bread (Bread Machine Version)
Bread ingredients: High-gluten flour 375g, granulated sugar 45g, egg 1 (about 50g), salt 3g, yeast 5g, milk powder 12g, milk 210g, butter 45g.
Coconut filling: Butter 35g, granulated sugar 38g, whole egg 38g, milk 35g, coconut shreds 75g.
First, make the dough. Add all the dough ingredients except for the butter to the bread machine in the order of liquid first and then solid (milk-egg-sugar, salt-high-gluten flour-milk powder-yeast), and finally make a small hole in the flour to put the yeast in.
Start the bread machine’s custom kneading program, select 20 minutes, and start kneading (after stirring for a while, you can add water or flour to adjust the softness and hardness of the dough).
After the first kneading program ends in 20 minutes, the dough has been kneaded until smooth. At this time, you can add the butter and start the second kneading program, also for 20 minutes.
After both kneading programs are finished, select the yogurt function (i.e. fermentation function), cover the bread machine lid and ferment. When it is fermented to 2-2.5 times its original size, it is done.
At this time, you can make the coconut filling: soften the butter until your finger can poke it, add granulated sugar, and beat with an egg beater.
Add the egg liquid in two portions, and wait until it is evenly mixed before adding the next portion.
Add milk in portions and mix well with a scraper.
Add coconut shreds and mix well.
Now the coconut filling is ready.
Take out the fermented dough from the bread machine, put it on a silicone plate, exhaust it, and roll it into a large rectangle. Spread the prepared coconut filling evenly on top.
Roll it up, then pinch the seam tightly, and cut it in the middle with a knife (leave a little on the top uncut).
Twist it into a figure-eight shape, pinch both ends tightly, and put it in the bread machine. Select the yogurt function (i.e. fermentation function) again, cover the bread machine lid and ferment for the final time. When it is fermented to 2-2.5 times its original size, it is done.
Select the baking function, set the time to 40 minutes, and select the browning option.
After baking for 25 minutes, brush the remaining egg liquid on the surface of the bread and continue baking.
The fragrant coconut bread is now ready.
