Main Ingredients:
Pudding Mix: 500g; Coconut Milk: 800ml; Powdered Sugar: 180g.

Detailed Steps for Making Coconut Milk Red Bean Pudding
Weigh the pudding mix. (Accidentally added 10g extra, no big deal)
Add powdered sugar and mix. (If no powdered sugar, use granulated sugar; if using granulated sugar, mix it in the coconut milk to dissolve)
Use a knife to open the coconut milk cans (be careful). Two cans are exactly 800ml.
Pour in the coconut milk while stirring.
Sift the mixture.
The mixture is thick, use a ladle to help with the sifting.
Pour into clean molds. (I filled them 90% full, leaving a little space for the red beans)
With 500g of mix, you can make 20 puddings.
Add canned red beans. (Do not add the red bean liquid)
Place in a steaming tray and steam for 15 minutes. (If no steamer, a steaming pot works too)
My steamer can fit two trays at once.
Nice and full.
After cooling, run a bamboo skewer along the edge of the bowl to remove the pudding.
So chewy!
