Detailed Steps for Cooking Colorful Fried Rice
Soak the dried shiitake mushrooms in hot water until soft, then dice them. Dice the scallions, carrots, red bell pepper, and ham sausage (as shown in the picture). It took me a while because my kitchen knife is not very sharp.
Heat some oil in a pan and crack the eggs directly into it.
Scramble the eggs and set them aside.
Add some oil to the pan and stir-fry the carrots (2-3 minutes), red bell pepper (2 minutes), ham sausage (2 minutes), and scallions (30 seconds). Add salt and 5ml of soy sauce and stir-fry.
Pour in the scrambled eggs and stir-fry everything together. Set aside.
Add some oil to the pan and pour in the rice. Use a spatula to press the rice into small pieces. If the rice is too dry, you can add some water from the soaked shiitake mushrooms (in moderation, as too much water will not be good).
Pour all the prepared ingredients into the pan with the rice and stir-fry everything together. Finally, add 5ml of soy sauce and stir-fry until done.
