Prepare all the ingredients;
Remove the bones, skin, and excess fat from the chicken thighs, then cut them into small cubes about 1cm in size. I have already prepared the chicken thighs. Then add cooking wine, soy sauce, a little salt, cornstarch, shredded scallions and ginger, and a little oil to the chicken cubes, mix well with your hands, and set aside to marinate for about 15 minutes;
Remove the hard core from the pineapple, cut it into cubes about the same size as the chicken, and soak it in lightly salted water for 10 minutes. Remove the white part from the colorful peppers and cut them into cubes as well;
