Cut the tofu into thick slices, marinate with soy sauce and a pinch of salt for 10 minutes (while preparing other ingredients).
Blanch the green peas in boiling water with some salt and oil until cooked.
Finely dice the onion and ham sausage, mince the ginger and garlic, and chop the spring onion.
Beat the egg in a bowl, add flour to make a batter.
Dip the marinated tofu into the batter (use your hands gently, avoid breaking the tofu; I used chopsticks for the photo).
Heat oil in a pan, fry the battered tofu over medium heat.
Fry the tofu until golden brown on both sides, then remove and plate.
Leave some oil in the pan or heat a new pan with oil, add tomato juice for color, then stir-fry ginger, garlic, pickled chili, onion, and ham sausage.
Once the ingredients are fragrant, add the blanched green peas, season with salt and chicken essence, stir well.
