Detailed steps for making Cranberry Green Tea Cheesecake
The cake is made the night before.
Cheese ingredients
Beat eggs and 30g sugar together with an egg beater until well mixed.
Add milk and continue to stir while steaming in a pot.
Add gelatin powder and stir until dissolved, then set aside.
Combine 30g sugar and cream together.
Beat until fluffy and set aside.
Beat mascarpone cheese and lemon juice until fluffy, then add milk and egg mixture and beat well.
Add green tea powder and mix well.
Add whipped cream and mix well.
Add cranberries to all cake ingredients, mix well, and pour into an 8-inch springform pan greased with butter.
Add another slice of cake and pour in the cheese mixture. Smooth it out and refrigerate for at least 4 hours.
For the mirror glaze (150g milk, 12g gelatin powder, 35g sugar), put all the ingredients in a small pot and simmer over low heat until boiling. Turn off the heat and let it cool to room temperature.
Pour the milk mixture onto the cake and refrigerate until set. Remove from the refrigerator and use a hair dryer to blow around the edge of the cake pan.
Remove the cake from the pan and cut into pieces. Add your favorite fruit slices to the cake and sprinkle with cranberries soaked in fruit juice. Enjoy!
