Detailed Steps for Making Crispy Cake
(I used whole wheat flour so it looks a bit dark. Actually, it’s easier to make with regular flour): Add salt to the flour. Mix baking soda with water to form a dough (this dough is quite hard. Kneading it may require some effort. Be patient)
Knead the dough until it becomes smooth. Let it rest for half an hour
Take out the rested dough, knead it a few times, divide it into small portions, roll it out like dumpling wrappers. Then brush some oil on each layer, stack about three to four layers, continue rolling until it’s about one centimeter thick. Use a mold to shape the dough. Repeat for all portions
Preheat the oven to 160 degrees Celsius, bake for 5 minutes to set. Once done, let it cool and remove the mold

While the cake crust is baking, let’s make the cake batter. Separate egg whites and yolks. Beat the egg whites with vinegar or lemon juice until foamy
(I used xylitol for health reasons. You can use regular sugar) Add sugar in three portions. Beat until the egg whites form stiff peaks
Beat egg yolks with water, 10g sugar, salt, and baking soda until slightly pale
Add egg whites to egg yolks in three portions (each time, fold gently until well combined)
(I used multigrain flour, that’s why the flour looks yellow) Add flour in multiple portions (each time, fold gently until well combined. Do not stir in circles). Once well combined, transfer the batter to a piping bag
Fill the mold with the batter (using a piping tip makes it easier to control the amount). Sprinkle with your favorite dried fruits
Preheat the oven to 200 degrees Celsius. Bake at 140 degrees Celsius for 15 minutes
