Steps for Cooking Crispy Pickled Cucumber Rolls
Prepare two cucumbers, wash them, and cut them into long sections of about 8cm. The length of the cucumber sections can be adjusted as desired.
Remove the cucumber core and only keep the part that is tightly attached to the skin. Boil some water in a pot, pour in the prepared cucumber sections, and add salt to blanch them.
Remove the cucumbers from the water and let them cool.
Chop the dried chili peppers, finely chop the scallions, and dice the fresh pork.
Heat some oil in a pan, stir-fry the scallions and dried chili peppers until fragrant, then add the diced pork, and stir-fry briefly with some seasoning, such as salt and chicken essence.
Prepare the scrambled eggs, diced pork, and diced ham, and stir-fry them together. Then, put them into the cucumber sections one by one, and they are ready to eat.
