Crispy Pickled Vegetables – Spicy Radish Strips Cooking Steps
Wash the radish and dry thoroughly
Cut into pencil-thick strips, place the cut radish strips in a container without oil or water, and sprinkle with sun-dried salt
Use hands to mix and evenly distribute the salt in the radish
Leave in the container for over 10 hours to ensure thorough pickling
Spread the pickled radish flat in the sun and turn it over once a day
It will be about 80% dried in around 3 days
Store the dried radish strips in a bag in a cool place
Rinse the dried radish strips in water several times, then soak in clean water until soft enough to be easily squeezed through, which takes about 1 hour.
Squeeze out excess water as much as possible, preferably with the help of a man at this stage.
Loosen the squeezed radish strips, sprinkle with seasonings such as Sichuan peppercorn powder, salt, and chili powder.
Then add a suitable amount of light soy sauce for seasoning.
Wear disposable gloves, mix and toss thoroughly to marinate, taste and adjust seasoning as needed until it suits your taste.
Store the finished radish strips in a sealed jar in the refrigerator, and they can be enjoyed for about a week after each batch is made. Make as needed to prevent spoilage.
