Steps to Make Crispy Seafood Pizza
Fry the dried shrimp over low heat until golden and crispy.
Add the beaten eggs and stir-fry together.
The eggs don’t need to be too well-done. Just stir-fry until cooked through with the residual heat.
Chop the Chinese chives.
Once the dried shrimp and eggs have cooled down, add the chopped Chinese chives and seasonings, and mix well.
Soak the rice noodles in cold water until they soften, but be careful not to use too much water.
Spread the rice noodles out on a plate and use your hands to flatten them out evenly, making sure they are thin but not torn.
Spread the filling evenly on top of the rice noodles, add a little oil around the edges to prevent sticking, cover the pan with a lid, and heat the pizza over low heat, rotating the pan to ensure even cooking and prevent burning. This process takes about 15 minutes, but the cooking time may vary depending on your stove and pan. Keep an eye on the pizza and adjust the heat as needed. After the edges of the pizza have curled up and the filling and rice noodles are cooked through, remove the lid and turn up the heat slightly to let any excess moisture evaporate for about 3 minutes. Then turn off the heat.
Remove the pizza from the pan. It’s so crispy and delicious that the bottom of the pizza may stick to the pan a little bit.
