Steps to Make Custard Bun
Custard Sauce: Put 1 egg yolk, 10g sugar, 15g high-gluten flour, and 65g fresh milk in a pot, mix well with a whisk.
Cook over low heat, stirring to a paste, then remove, cool, cover with plastic wrap, and refrigerate for 1 hour.
Mix custard sauce with main ingredients in a bread maker for 20 minutes until a slightly smooth dough is formed.
Add butter and mix until the dough can be stretched into a slightly transparent film, then place in a container to ferment until 2-2.5 times larger.
After the dough has fermented, deflate it, divide it into 7 portions, round them, cover with plastic wrap, and let them rest for 15 minutes.
Take a portion of dough, roll it into a long tongue shape, then flip it over.
Roll it up from the long side, seal tightly.
Gently roll it to the same length as the baking tray.
Place in a warm, humid place for the second fermentation.
Brush the fermented dough evenly with egg wash, sprinkle with white sesame seeds.
Bake in a preheated oven at 180 degrees for about 20 minutes.
