Steps to Make Custard Super Soft Toast
Custard Sauce: 1 Egg Yolk, 10g Caster Sugar, 15g High Gluten Flour, 65g Fresh Milk
Pour all ingredients into a pot
Stir well
Heat on low heat, stir constantly until thickened, then remove from heat
Cool, cover with plastic wrap, refrigerate for 60 minutes
Dough Ingredients: 250g High Gluten Flour, 30g Caster Sugar, 1/2 tsp Salt, 1 tsp Dry Yeast, 15g Milk Powder, 100g Water, 25g Butter
Pour custard sauce and other dough ingredients (except butter) into a large bowl
Knead into a smooth dough, then add butter
Continue kneading until elastic
Place in a bowl, let it rise until doubled in size
Divide into 3 equal parts, shape into rounds, let rest for 15 minutes
Roll out into an oval shape
Roll up
Place in a toast box for final proofing
Dough should fill 90% of the box
Brush with egg wash
Bake in preheated oven at 180°C for about 30 minutes
Remove from oven
Unmold immediately
Check the inside by pulling apart
