Put all ingredients except butter into the bread bucket. Start the mixing program.
Mix into a dough, add butter when a thick film forms. Continue mixing.
Knead until a gluten film forms, then take out the dough!
Shape into a round and place in the oven for fermentation at 28 degrees Celsius.
Ferment until doubled in size, poke a hole and it doesn’t shrink back!
Divide the dough into three equal parts, roll into balls, cover with plastic wrap, and let it rest for 15 minutes.
