I use one-time fermentation, directly shaping the dough and then putting it in a steamer on a cold water pot for fermentation. The fermentation time for white steamed buns without shaping is usually 30-40 minutes. Because of the hot weather in Malaysia, I ferment the dough on cold water. I observe whether the fermentation is complete by touch. The feeling of pressing down lightly when the time is up is like the feeling of the flesh under the thumb of the palm (as shown in the picture) when it is relaxed. If it doesn’t feel right, wait another five minutes and observe again. (In general, the longer the shaping time, the shorter the fermentation time. The shorter the shaping time, the longer the fermentation time.) My gas stove has a higher heat, so I steam it over medium-low heat for 18 minutes. After the time is up, I turn off the heat and wait for 5 minutes before opening the lid. (My heat is for reference only. You should adjust your own heat and not make it too high or too boiling.) Remember to take notes every time you finish, so that you can improve next time.️
