Steps to Make Date and Walnut Cake with Chinese Red Dates
Wash and pit the Chinese red dates.
Crush the walnuts and bake them in the oven at 150 degrees Celsius for 15 minutes.
Puree the Chinese red dates in a blender with twice the weight of water.
Soak the maltose in hot water for easier removal.
Mix the tapioca starch with water until smooth.
Put the Chinese red date puree and maltose in a non-stick pan.
Cook the mixture over medium heat until boiling, then add the tapioca starch solution and stir well.
Add the butter and continue to stir-fry until the mixture no longer sticks to the pan, spatula, or hands, and has a firm, elastic texture. Add the walnuts and mix well.
Pour the mixture into a baking pan and shape it evenly.
Let it cool and cut into pieces.
