Detailed Steps for Cooking Delayed Bread – Christmas Stollen Bread
Soak the mixed dried fruits in rum overnight and drain them; weigh all the main dough ingredients except butter and put them into the bread machine, select the dough function and start kneading.
After 20 minutes, add the butter in 5 portions and continue kneading.
Add the soaked dried fruits during the kneading process.
After kneading, let the dough rise until it doubles in size, then gently press the dough to remove air bubbles.
Divide the dough into 2 parts, round them and let them rise for 15 minutes.
Flatten the risen dough, roll it into an oval shape with a rolling pin.
Fold it in half, dust some high-gluten flour on it, and press a line with a rolling pin.
Place the shaped dough on a baking sheet and let it rise for the final time.
Let it rise until it expands to 1.5 times its original size, then preheat the oven to 180 degrees Celsius, bake it on the middle rack with upper and lower heat for 25 minutes; brush it with melted butter immediately after taking it out of the oven to keep it moist.
After cooling, sprinkle some powdered sugar on it and it’s ready to serve.
