Prepare all the ingredients.
Wash the pig’s trotters, remove the hair, cut into 3cm wide pieces, soak in clean water for at least 2 hours, changing the water midway.
Soak the soybeans in water for half a day.
Prepare the spices.
Cut the green onions into sections, slice the ginger.
Bring cold water to a boil, add the cleaned pig’s trotters.
Blanch for 2-3 minutes, then rinse and drain.
Heat oil in a pot, add ginger slices, green onion sections, star anise, cinnamon, chili, and bay leaf, stir-fry until fragrant.
Add the pig’s trotters and stir-fry until slightly browned.
Add soy sauce, cooking wine, and sugar, stir-fry until well colored.
Add water to cover the pig’s trotters, bring to a boil over high heat.
Reduce heat, cover the pot, and simmer for 40 minutes.
Add salt and soaked soybeans, continue simmering.
