Detailed Steps to Cook Delicious Curry Rice
Prepare chicken breast, onions, carrots, and potatoes.
Also, prepare curry powder and curry blocks. You can find these curry blocks in most supermarkets. Making curry rice with just these is also great.
Cut carrots, peeled potatoes, and chicken breast into 1cm cubes. (Potatoes can be slightly larger so they don’t break down too quickly when reheated.) Finely dice the onions.
Heat oil in a pan, add diced onions, and stir-fry over medium heat. (Keep stirring constantly to prevent burning.)
Sauté the onions until they turn golden brown.
Add the chicken cubes and stir-fry together.
Once the chicken changes color, add carrots and potatoes and continue stir-frying.
When the carrots and potatoes are evenly coated with oil, quickly stir in the curry powder. (Stir quickly to prevent the curry powder from sticking to the pan.)
Once the curry powder releases its aroma (preferably with a slightly toasted scent), add broth or water. (The liquid should cover the ingredients.) Bring to a boil over high heat, then reduce to low heat and simmer until the potatoes can be easily cut in half with a spatula. (This means the potatoes are cooked through.)
Turn off the heat, add the curry blocks, and let it simmer for five minutes. (Make sure the curry blocks dissolve into the broth.)
After five minutes, when the curry blocks have melted, simmer over low heat for another five minutes to enhance the flavors. (During this time, stir frequently to prevent sticking, or all your efforts will be wasted.) Delicious curry rice is ready.
Plate with cucumber and carrot slices. (Not only for presentation, but also to refresh the palate and cut through the richness.) Serve the rice in a small bowl, then invert the bowl onto the plate, pour the fragrant sauce over it, and enjoy!!!
