Cut the pork into thin strips, add salt, cooking wine, dark soy sauce, ginger powder, and light soy sauce, mix well and marinate for about 20 minutes. Add a little oil and mix well before cooking.
Wash and cut the garlic shoots into sections.
Heat the wok, add plenty of oil, and heat the oil until it is very hot to prevent the pork from sticking to the wok. Add the marinated pork strips and stir-fry until they change color. Remove and set aside.
