Detailed Steps for Making Delicious Pumpkin and Red Bean Mooncakes
Mix sugar, maltose, peanut oil, and baking soda together, and make a flour wall. Pour in the mixture and add eggs and an appropriate amount of steamed pumpkin (it’s better to stir-fry the pumpkin to remove excess water). Knead the dough and let it rest for 60 minutes.
Divide the rested dough into 20g portions and the red bean paste into 30g portions. Flatten the dough and wrap it around the red bean paste (the red bean paste should be prepared the day before, see above for instructions).
Shape the dough into a round shape and press it flat. Use a toothpick to make even marks on the dough and then press it into a pumpkin shape with the toothpick.
Use a piping tip to press down on the center of the pumpkin.
Place the finished mooncakes on a baking sheet, bake at 170 degrees Celsius for 5 minutes to set the crust, brush with egg wash, and continue baking for about 15 minutes.
The finished product is golden and delicious.
