Detailed Steps for Cooking Dian Wei Xiao Guo Mi Xian
Place a small pot on the stove and add an appropriate amount of water. I used a purple copper single-handle small pot that I bought in Lijiang many years ago, but other small pots can also be used.
After the water boils, add the minced meat, preferably a mixture of lean and fatty meat.
Use chopsticks to break up the minced meat and cook for two minutes.
Add soy sauce, lard, pickled vegetables, and chili oil in order and cook for a while.
When the water boils, add the rice noodles and cook for about 3 minutes.
Finally, add chopped coriander and leek and cook for a while. Add an appropriate amount of salt. Delicious Dian Wei Xiao Guo Mi Xian is ready to serve.
Remember to add pickled vegetables and lard as toppings.
