Steps to Make Dirty Dirty Bun
Except for butter, put all ingredients for the main dough into the bread machine bucket, start the kneading program for 20 minutes.
Add softened butter, start the kneading program for another 20 minutes until the dough reaches the expansion stage with good elasticity. Round the dough, cover with plastic wrap, let it rest for 10 minutes, then flatten the dough, cover, and freeze in the refrigerator for about 30 minutes.
During this time, make the butter slice by mixing softened butter with 30g low-gluten flour, 10g cornstarch, and 5g cocoa powder. Spread the mixture on parchment paper, fold the edges to form a rectangular butter slice, and refrigerate for 20 minutes. Roll out the chilled main dough into a rectangle that can wrap around the butter slice, ensuring the dough is pliable enough to bend with hands.
Wrap the main dough around the butter slice, press lightly at the seam, seal tightly, and roll out the dough evenly with a rolling pin. Fold the dough from the middle to the ends, avoiding back-and-forth rolling. Complete the first fold, refrigerate for 20 minutes, and repeat this process.
After refrigeration, roll out the dough, fold one-third from the left to the right, and one-third from the right to the left, creating three layers like folding a blanket. Refrigerate for 30 minutes.
Roll out the dough into a long rectangle, cut into four pieces, place a small piece of dark chocolate on one end, and roll it up. Place on a baking sheet lined with parchment paper, and let it ferment in a warm, humid environment for about 2 hours.
Preheat the oven to 180°C, bake the buns in the middle rack at 180°C for 15 minutes.
After baking, cool the buns on a wire rack, then drizzle with chocolate sauce and dust with cocoa powder before serving.
Sprinkle a thick layer of cocoa powder on top of the chocolate sauce for an extra touch.
