Steps to Cook Dongpo Pork Knuckle
Use fire to remove any pig hair residue on the pork knuckle skin, boil it in hot water for a few minutes to remove impurities, then remove the pork knuckle, make a few cuts with a knife on it for quicker cooking.
Bring a new pot of water to a boil, add some green onion, ginger, and bay leaves, cook the prepared pork knuckle until 70-80% done, remove it, and place it in a steamer.
After steaming the pork knuckle, transfer it to a plate, pour the freshly made sauce over it, and it’s ready to serve.
