Step-by-Step Cooking Instructions for Doraemon Red Bean Mochi Bun
Soak the butterfly pea flowers in boiling water. After the soaked water cools, filter it with a sieve. You can squeeze the soaked butterfly pea flowers to extract higher juice concentration.
Pour 160g of butterfly pea flower water into a bread bucket, add 15g sugar, 300g cake flour, and 3g yeast to start kneading the dough.
Knead into a smooth dough, then let it ferment in the oven.
Add water, 100g cake flour, 1g yeast to form a dough.
Divide into 2 small doughs, one knead with red yeast rice to make red dough, the other knead with bamboo charcoal powder to make black dough, then let them ferment in a warm place.
Let the blue dough ferment until it doubles in size.
Take out the dough, deflate it, divide into 8 portions, round them and let them rest for 15 minutes, remember to cover with plastic wrap.
Place a ready mochi ball on top of the red bean paste bun, seal and round it for later use.
Roll out a blue dough, place the red bean mochi filling inside.
Seal it, slightly flatten it.
Roll out the white dough into thin sheets, use a circular mold to cut out large and small circles, brush some water on the blue dough and stick the white circles on top.
Take a little red dough, roll it into a ball for the nose, take a little black dough, roll it into balls for the eyes, and roll a little black dough into thin strips for the mouth and whiskers.
Let it rest and rise for 20 minutes in a steamer.
