Detailed Steps for Cooking Double-Boiled Bird’s Nest
Start by removing the packaging of the bird’s nest.
Soak the bird’s nest in purified water, ensuring the water covers the bird’s nest, soak three cups.
After two hours, it will expand slightly.
Tease apart the bird’s nest strands and change the water.
Continue soaking, I soaked for five hours, then pick out any impurities.
Rinse several times with purified water.
Set aside some bird’s nest for later, freeze it.
Place the bird’s nest in a double-boiler, add water just enough to cover it, cover the pot and place it in another pot with water reaching halfway up the double-boiler, bring to a boil over high heat, then simmer for 25 minutes.
While simmering, prepare some goji berries, red dates, and dried longan.
For the rock sugar, I used about two large and one small cup, add more if you prefer it sweeter.
After 25 minutes, uncover the pot, the bird’s nest will be slightly boiling, with an egg white flavor, at this point add the additional ingredients.
Simmer for another three minutes until the sugar melts, then turn off the heat.
You can also add black goji berries for a starry bird’s nest.
