Prepare all the ingredients needed.
Boil water in a pot and add in the sago.
After the water boils, turn to medium-low heat and keep boiling.
Stir with a spoon while boiling to prevent sticking to the pot, and keep boiling until completely transparent, which takes about 10-15 minutes.
Use a colander to remove the sago and put it in ice water to cool.
Prepare the dragon fruit by cutting it in half with a knife.
Then pour half of the dragon fruit flesh and coconut milk into a cooking cup. Red dragon fruit is sweeter, so there is no need to add extra sugar.
Blend well with a magic wand, cover with plastic wrap and refrigerate for a while for better taste.
At this point, remove the cooled sago and put it in a small bowl.
Then pour the chilled coconut milk dragon fruit juice on top.
Cut the remaining half of the dragon fruit flesh into small pieces and gently place them on top, and finally decorate with a mint leaf.
