Detailed steps for making Dragon Fruit Ice Cream

Pour the granulated sugar into the egg yolk bowl and stir well.
Heat the egg yolk mixture over hot water until the egg yolk becomes cooked and light in color.
Add milk and mix well, then let it cool before using.
Peel and dice the dragon fruit, then mash it into a puree with some small pieces remaining.
Put the dragon fruit puree, milk and egg yolk mixture, and whipping cream into the ice cream container. The mixing blade can be installed before or after adding the ingredients. Place the ice cream container into the Bokuk IC1280 ice cream machine.
Close the lid and select the “Ice Cream” program, which defaults to 60 minutes. The time can be adjusted according to personal preference. Soft ice cream can be made in as little as 40 minutes. I used 50 minutes.
