Steps to make Dragon Fruit Mousse Cake
Press the cake slice into a small bowl to make it slightly smaller than a 6-inch chiffon cake mold, and place it inside.
Soak 2 gelatin sheets in water until soft, then take them out and put them in 50g of milk. Melt them over hot water and let them cool.
Mix 200g of dragon fruit juice with 40g of granulated sugar and the melted gelatin liquid.
Whip the whipping cream with 20g of sugar until it has slight lines.
Pour the dragon fruit juice into the whipped cream.
Stir well to make the mousse liquid, and pour it into the cake mold.
Add 100g of dragon fruit juice to 1 soaked gelatin sheet. Add 50g of water, melt over hot water, and let it cool. Pour it on top of the mousse and refrigerate overnight.
Take it out and blow dry the edges with a hair dryer, then remove the mold.
