Detailed Steps for Dry-Fried Yellow Croaker
Yellow Croaker.
Remove scales, cut open the belly, and remove the gills. Marinate with cooking wine, green onion, and ginger for 10 minutes.
Coat the fish with soybean flour.
Fry until the skin is crispy and golden brown.
Remove from the oil and drain.
Cut the thinly sliced pork into small pieces and slice the shiitake mushrooms.
Sauté the pork over low heat until the oil is released. Add the shiitake mushrooms and bean sprouts and stir-fry until fragrant.
Over low heat, add garlic, ginger, dried chili pepper, Doubanjiang, and sugar and stir-fry until fragrant. Add the fish and water.
