Prepare the ingredients.
Soften the gelatin in 80g of milk.
Remove durian seeds, add 120g of milk, blend in a food processor until smooth.

Combine whipping cream and caster sugar, beat with an electric mixer until soft peaks form. Chill in the refrigerator for later use.
