Prepare the ingredients.
Trim the prawns, remove the digestive tract from the back, clean and pat dry the prawns. Place them in a bowl, marinate with cooking wine and ground pepper for about ten minutes, add the sweet and spicy sauce and soy sauce, mix well, and refrigerate for about 2 hours to let the prawns marinate.
Prepare a baking tray and rack, line the baking tray with foil, place the rack on top. Get the bamboo skewers, take the marinated prawns out of the fridge, wear disposable gloves, skewer each prawn from tail to head.
Place the skewered prawns on the rack, brush the prawns with olive oil, and put them in the oven.
Bake in a preheated oven at 200°C for 10 minutes. Cover the prawn tails with foil to prevent burning.
Prepare a large plate, wash the lettuce leaves, filter with clean water, arrange them on the plate, and place the grilled prawns on top.
