Mix 100g of chocolate sauce with 100g of milk
Cut gelatin sheets into small pieces, soak in cold water until soft
Whip whipping cream with 15g of sugar until it forms patterns
Mix softened gelatin sheets with 20g of milk, heat over water until melted into gelatin liquid
Take 3g of gelatin liquid, 10g of whipping cream, 5g of chocolate milk mixture, mix them evenly
Transfer the mixed small mousse into a piping bag, carefully fill the bear’s belly and mouth, refrigerate for 15 minutes
Pour the remaining gelatin liquid into the chocolate milk mixture, mix well
Pour the mixed liquid into the whipping cream, mix well to make mousse mixture
Cut the prepared sponge cake slice into circles, ovals, or small pieces smaller than the mold size
Pour a layer of mousse mixture into the mold, cover the entire face of the bear
Place the cut cake pieces on top of the mousse mixture
