Remove the red part and outer skin of the watermelon rind, leaving the white part, cut it into small cubes. This was my first attempt, so I only used a small amount of ingredients for a trial. (My husband only ate one piece of watermelon, hehe!) That’s why I only had one piece of rind.

Add an appropriate amount of water and boil the watermelon rind until it turns transparent. If you have a food processor, you can put the cooked rind in it (let it cool) and process it. I didn’t use a food processor, so I encountered some problems!

If you have a food processor, continue cooking the processed rind in the pot, add sugar (add more if you like it sweeter, it will last longer), and make sure to stir constantly until the liquid reduces. Add QQ sugar (I bought orange-flavored ones, so the jam turned yellow!)

Once done, transfer the jam into a container. If you made a large batch, use honey for preservation. Add a spoonful of honey when it cools slightly; it acts as a preservative. Store in the refrigerator and enjoy a spoonful whenever you crave it. Oh! I regret not using a food processor; the jam turned out chunky, and I added too much QQ sugar, making it feel like eating QQ candy, haha!
