In the mixing bowl of a stand mixer, add milk, sugar, and salt, then add high-gluten flour, milk powder, and yeast
Start at speed 1 for 1 minute, then switch to speed 5 and knead for 5 minutes
After the dough comes together, add softened butter chunks
Knead at speed 4 for 4 minutes and stop
The dough should now pass the windowpane test, which took a total of 10 minutes
Take out the dough, divide it into three portions, with the largest being around 280g, the smallest around 60g, and the remaining as the medium-sized portion
