Wash and peel the potatoes. If you don’t have large potatoes, you can use small ones as a substitute, the method is the same.
Cut into thin strips.
Boil until the potatoes are soft (you can use chopsticks to break the potatoes).
Drain and let dry.
Place the cooled potato strips in the freezer until firm.
Thaw the haddock fillet in advance.
Cut into small pieces.
Dredge the fish pieces in flour.
Dip in beaten egg.
Coat with breadcrumbs.
Repeat this process for each piece.
Heat oil in a pan until it reaches 70% heat.
Fry the fish pieces over medium heat.
Once one side is cooked, flip to fry the other side (I used whole wheat breadcrumbs so the color change may not be very noticeable, if using regular breadcrumbs, flip when one side turns golden brown).
Place the fried fish pieces on kitchen paper to absorb excess oil.
Repeat this process until all fish pieces are fried.
Remove the frozen fries.
Add more oil to the frying pan, heat it up, then add the fries.
Fry the fries until golden brown, then remove and drain excess oil (if you like crispy fries, you can fry them again now, but for health reasons, I won’t).
Arrange the fish pieces and fries on a plate, sprinkle with salt according to taste, drizzle with salad dressing and ketchup, and finally add the vegetables.
