Detailed Steps for Cooking Fish Soup Rice Noodles
Prepare the ingredients.
Prepare the fried small fish.
Cut the onion into pieces.
Peel and cut the tomatoes into pieces. To peel the tomatoes, I like to use the method of burning them with fire. Poke the tomatoes with chopsticks and put them on fire until the skin bursts. Then wash and remove the skin. It’s very convenient.
Wild garlic is used here, but it is not available in every household. You can use garlic instead or omit it. When I wrote the ingredients, I wrote garlic, but I actually used wild garlic.
Heat the wok and pour in oil. Stir-fry the onion until it becomes translucent. I just realized that I missed the picture of stir-frying the onion. After stir-frying the onion, add water and bring it to a boil. Add the fried small fish,
and add the tomatoes.
Bring to a boil over high heat, then simmer over low heat for twenty minutes. Add salt to taste.
Strain the soup and the cooked fish and vegetables can be directly mashed into a paste using a food processor, so there is no waste.
This is the obtained soup.
Boil the strained soup and add the dry rice noodles. Cook until done.
Take a large bowl, put in the washed shepherd’s purse, pour in a little cooking wine, drizzle with sesame oil, and add a little pepper.
Serve the cooked rice noodles and soup together, and add chili oil and vinegar when eating. That’s it.
