Cook the rice in a rice cooker, using a ratio of 2:1 for glutinous rice to sticky rice. Use slightly less water than usual to ensure the rice is not too soft and has a good texture.
While the rice is cooking, dice the carrot, dried shiitake mushrooms, lap cheong, and char siu into small pieces, and chop the cilantro.
Heat some oil in a pan.
Add all ingredients (except cilantro) to the pan.
Add salt, soy sauce, and a little water. Stir-fry until cooked through (do not add too much water, as it will affect the sticky rice).
Turn off the heat and add the cooked rice.
