Steps to Make Floating Island
Infuse vanilla seeds in milk and simmer over low heat
Separate egg whites and yolks, mix yolks with 80g sugar
When milk starts to boil, slowly pour it into the egg yolks while stirring. (It’s best to strain out any impurities from the milk)
Once all the milk is poured into the yolks and mixed well, pour it back into the pot, cook over low heat while stirring until the egg-milk mixture thickens, then remove from heat. This is the English custard cream sauce, best chilled for 1-2 hours after making
Whip egg whites, gradually add 60g sugar in 2-3 batches, and add lemon juice
Bring a pot of water to a boil, scoop a spoonful of whipped egg whites
Place it in the boiling water, flip after 5 minutes and cook for another 3 minutes
Finally, caramelize about 75g sugar in a pan until it forms a thick brown caramel
Pour the caramel over the whipped egg whites
Fill a cup or bowl with English custard sauce, then place the caramel-coated egg whites on top. The Floating Island is complete! The crispy sweet caramel envelops the fluffy egg whites, making your mouth water just thinking about it, right?
