Peel and cut the ginger into small pieces.
Puree the ginger in a food processor (or grind it into a paste using a ginger grinder).
Place the pureed ginger in a cloth bag (or cheesecloth).
Squeeze out the ginger juice, about 20g.
Pour the milk into a pot and heat over medium heat.
Add granulated sugar and boil the milk until it just boils, then turn off the heat.
Reheat the milk to about 70 degrees Celsius.
Quickly pour 200ml of milk into the ginger juice, the process must be fast, and must be completed within 3 seconds, in one go, without interruption.
Let it sit for 10 minutes, do not move or stir!
