Detailed Steps for Cooking Fresh Chinese Yam and Sweet Potato Sweet Soup
Peel the Chinese yam and sweet potato, and cut them into chunks. (It’s recommended to wear gloves when peeling the Chinese yam to prevent itching)
Soak the white fungus for a few hours, remove the stems, and cut into small pieces.
Put the white fungus, Chinese yam, and sweet potato into a pot, and add water.
Add ginger slices.
Cover the pot, bring to a boil over high heat, then simmer on low heat for 30 minutes. (Stir occasionally to prevent sticking to the bottom of the pot)
Add rock sugar in the last 5 minutes of cooking.
Stir until the sugar is dissolved and it’s ready to serve.
