Wash the chicken thighs, I like to eat them with the skin on, less dry and tough, not getting stuck in the teeth. Cut into small pieces, mix with flour, starch, soy sauce, and a little Cajun seasoning. You can add some soy sauce and pepper for flavor, wrap in plastic wrap and refrigerate for an hour.
For frying, I usually use blended oil or vegetable oil, without a strong oil flavor. Heat the oil in a pan until bubbles form when a chopstick is inserted, then you can add the chicken thighs. Fry until slightly golden brown, remove, and fry again for extra crispiness.
