Detailed Steps for Cooking Fried Pork Chop
Wash the pork chops and use a meat tenderizer to pound both sides. Mix with the marinade and marinate overnight. (Add a small amount of baking soda to the marinade to make the meat tender and juicy, but do not add too much as it will make the meat bitter.)
Beat the eggs.
Dust the pork chops with a thin layer of flour.
Dip both sides in the beaten eggs.
Coat both sides with bread crumbs.
Heat the oil to around 170°C. (When a chopstick is inserted, it should immediately bubble up.)
Place the pork chops in the oil and fry over medium-low heat for 2 minutes.
Flip and fry for another 2 minutes.
Flip again and fry each side for 1 minute. (Remove any foam during frying.)
Insert a chopstick into the thickest part of the meat. If no blood comes out when removed, it is cooked.
Fry on high heat for about 1 minute.
Remove and place on paper towels to absorb excess oil.
The surface is crispy. Serve one whole chop per person or cut into pieces.
