Main Ingredients:
White Rice: 3 liang (1 cup).
Additional Ingredients:
Dried Scallops: 18 pieces; Scallions: 1 stalk; Soy Sauce: 1 teaspoon; Salt: 1 small teaspoon; Oil: 6 teaspoons; Black Pepper Powder: a little; Thai Sweet Chili Sauce: 3 teaspoons.

Steps for making Fried Rice Balls
Wash the rice and cook it in a rice cooker. After it’s cooked, open the lid and let the rice cool down.
Take 18 dried scallops and wash them.
Boil the dried scallops over medium heat for 10 minutes.
Cut the scallions into small pieces.
Chop the boiled dried scallops into small pieces.
Mix the chopped dried scallops and scallions together, add 1 teaspoon of soy sauce, and stir well to make the filling.
Add 1 small teaspoon of salt and mix well to make the filling.
Pour 6 teaspoons of oil into a non-stick pan.
Flatten the rice with a spatula.
Spread some dried scallop and scallion filling on top of the rice, and use your hands to shape the rice into long balls.
Fry the rice balls in the pan with oil, sprinkle some black pepper powder on top, and fry for 2 minutes on each side.
Put 3 teaspoons of Thai sweet chili sauce on a plate, and place the fried rice balls on top. Dip the rice balls in the sauce before eating (or you can eat them without the sauce).
