Steps to Make Frog Purple Sweet Potato Buns
Put water, sugar, all-purpose flour, matcha powder, and yeast into the bread machine mixing bucket
Mix into a dough and put it in a bowl for basic fermentation in the oven. It’s best to cover the bowl with a damp cloth
Take it out of the oven when it has doubled in size
Flatten and deflate the dough, then knead it into round shapes. I kneaded an additional 30g of dough (not included in the ingredients) and divided it into three parts: one part with bamboo charcoal powder to make black dough, one part with red yeast rice wine lees or red yeast rice powder to make dark red dough, and one part white dough. Let them ferment in a warm place
Divide the green dough into six equal parts and roll them into balls. Let them rest for a while
Take one green ball and put about 25g of purple sweet potato filling inside
Wrap it up and repeat for the other five balls
Use different sizes of decorating tips to cut out the necessary circles. Use the white circles for the eyes, the red circles for the cheeks, and the black circles for the pupils
Brush some water on the dough and stick the parts on: use the white circles for the eyes, the red circles for the cheeks, the black circles for the pupils, and a thin black strip for the mouth
Place them in a steamer and let them rise for 20 minutes
Steam them in boiling water for 15 minutes, then let them sit for 3 minutes before serving
