Steps for Making Fruity Chicken Nuggets
300g chicken breast, a dozen cherries, 5 lychees, 2 teaspoons tomato sauce, 2 teaspoons Thai sweet chili sauce, 2 slices of ginger, a little salt, 1 teaspoon sugar, a little white pepper powder, and 3 tablespoons cornstarch.
Remove the fascia from the chicken breast, slice it in half, and then cut it into slightly larger than dice-sized pieces. Add a little salt, a little white pepper powder, and 1/2 teaspoon of cooking wine to marinate for 10 minutes.
While marinating the chicken, prepare the lychees and cherries. Wash the cherries and remove the stems, peel and pit the lychees. (You can use any seasonal fruit.)
Make a crispy batter for the marinated chicken. Add 3 tablespoons of cornstarch to a bowl, add a little water and mix well.
Add 1 teaspoon of cooking oil to the batter and mix well. The batter should be thick and creamy like yogurt. The batter is now ready.
Heat oil in a pan. When the oil is about 50% hot, add the chicken pieces one by one, trying to separate them as much as possible to prevent them from sticking together.
Fry for about 2 minutes until the chicken is cooked and firm. Remove from the oil.
When the oil temperature reaches 80% hot, fry the chicken pieces again.
Fry until the chicken pieces are golden brown and crispy. Remove from the oil and set aside.
Heat a little oil in a pan, add ginger slices and stir-fry until fragrant. Then add tomato sauce, sweet chili sauce, a little salt, and a little water.
Add about 1 teaspoon of sugar.
Cook until the sauce is bright and thick.
Add the fried chicken pieces, cherries, and lychees, and stir-fry quickly.
Stir-fry quickly until everything is evenly coated. It looks and tastes great, and kids love it!
