First, mix 725g of glutinous rice flour with water until smooth. Add water in two portions, ensuring the dough is smooth and not too soft. Avoid adding excess water to prevent the dough from becoming too soft due to weather conditions.
Prepare a pot of boiling water before kneading the dough. Once the dough is ready, and the water is boiling, cook the dough in the pot.
After kneading the dough, cook it in boiling water by forming balls of approximately 50g each. Cook until the balls float, which usually takes 5 to 8 minutes.
Next, mix the remaining ingredients – glutinous rice flour, baking powder, baking soda, sugar, and vanilla extract – together for about 10 minutes. (While the dough is cooking, combine all remaining ingredients in a mixing bowl and stir until well mixed.)
Sprinkle some glutinous rice flour on the table to prevent sticking. Transfer the dough that has been mixed for 10 minutes onto the table, shape it into a long strip, and cut into 300g pieces.
