Detailed Steps for Garlic Sprout Stir-Fried Beef
Ingredients: 1 bunch of garlic sprouts (cut into small sections), 1 piece of beef (sliced against the grain, marinated with cornstarch, salt, and chicken essence for more than 10 minutes), 1 green pepper and 1 red pepper (cut into small pieces), and 2 garlic cloves (sliced).
Heat the wok, add oil, and stir-fry the sliced garlic until fragrant.
After the garlic is fragrant, add the beef and stir-fry on high heat until it is just cooked. Try to keep the cooking time short to avoid overcooking the beef. Remove from heat and set aside. (Garlic can effectively remove the gamey smell of beef)
Wipe the wok clean, heat it up on high heat, add a small amount of oil (7/10 hot), add the garlic sprouts and salt, stir-fry until the surface turns color, and add an appropriate amount of water.
Cover with a lid and simmer over medium heat until the garlic sprouts are 70% cooked.
Add the green and red peppers and beef, stir-fry until cooked, season with chicken essence, thicken with starch, and serve.
